Year Round Wine

There is one wine that comes to mind when I think of wine I could drink year round, and that is Chardonnay.  Whether you like it clean, crisp and unoaked (like Passaggio, for instance!) or the big, buttery, and oaky chardonnay, this grape makes some of the most versatile wines…wines you can pour in a glass for any occasion, anytime.

Chardonnay pairs well with so many dishes.  An unoaked Chardonnay goes great with Lobster, Braised Pork or stews…all great dishes for the winter months.  An oaky, buttery Chardonnay pairs well with Salmon or Lobster and Veal.  Who does’t like Salmon or Lobster in the winter?

So, depending on the style of Chardonnay you prefer, you can still enjoy it all year round.  I urge you to try Passaggio’s Unoaked Chardonnay during the winter months and pair it with some of your favorite winter dishes.  Have fun with it…you never know what new pairings you might come up with.  Sharing them with friends and family makes it even better.

A Stainless Christmas In July

Is that all stainless…?  I get that question a lot about my wines.  Passaggio Unoaked Chardonnay, Pinot Grigio and Rosé are all fermented and aged in stainless tanks.  They do not go through malolactic fermentation which gives these wines a nice crispness that pairs well with food.  I also love to ferment the wines in different vessels, with different yeasts. They are left on the lees and stirred often.  I feel this adds a nice complexity to the wines.  The wines are then blended and cold/heat stabilized.

This is my mission.  My business is my passion.  I launched Passaggio Wines in 2008 following my 15 year law enforcement career. I moved to California to follow my passion to pursue a life making quality, food-friendly wines.  I left Virginia in 2004 and launched Passaggio Wines with my 2007 vintage.  Passaggio’s flagship wine is a unoaked Chardonnay.  I love to bring great wines, awesome food, and wonderful friends together.  Sharing is all part of the Passaggio story.

Passaggio’s success was built on it’s loyal customers and friends made along this wonderful journey.  I have had the chance to meet some of the greatest people during this pilgrimage.  They have made my success.

Passaggio Wines unique quality is created from passion.  Built on a shoestring budget, I was able to launch my dream.  The unoaked Chardonnay’s of today are getting great press and I am proud to have been on the cutting edge.

Cheers to 2011 Rosé

Yesterday was an awesome bottling day…I bottled the 2011 Passaggio Unoaked Chardonnay, Pinot Grigio, and the Rosé.  (whew!!)  The Rosé was a particularly fun project for me simply because it’s an unusual blend.  The stainless 2011 Rosé is 82% Zinfandel from Dry Creek Valley and 18% Napa Cabernet Sauvignon.

Last Call

Passaggio Wines will soon be sporting new labels.  It has been a wonderful journey and I hope that you are following your passion as well.  I started this journey in 2004, launching the 2007 Unoaked Chardonnay in 2008.  Since that time, Passaggio Wines has added a Pinot Grigio, Rosé, and Pinot Noir.
