I took the 2012 Chardonnay and Pinot Grigio off of cold settling and racked them to stainless barrels and tank. Tasting the juice before fermentation…what a great day! This is the beginning….this is it – gotta get this right!!! What’s the pH…? What’s the TA…? What’s the ML…? What’s the YAN…? What’s the Brix…? Whew!!! – here we go…yeast and nutrient are lined up and ready for the next step. Stay tuned for more…
Follow Your Passion
It’s that time of year when I start getting nervous yet excited about harvest. It’s on my mind day in and day out. When will the grapes be ready…is this an early harvest? Do I have all my equipment ready? Do I have all the chemicals I need? These are some of the thoughts running through my mind right before harvest. It’s like the quiet before the storm.
Excitement is in the air. All across the wine industry, wine makers, vineyard managers, cellar workers, and wine industry vendors are on standby. We are all hoping for a great harvest. We are all hoping for the best one yet…LOL
Whatever Mother Nature decides, we will make the best wine with what we have been given. I can’t wait to hear the sound of that first truck bring in the first fruit.

Is that all stainless…? I get that question a lot about my wines. Passaggio Unoaked Chardonnay, Pinot Grigio and Rosé are all fermented and aged in stainless tanks. They do not go through malolactic fermentation which gives these wines a nice crispness that pairs well with food. I also love to ferment the wines in different vessels, with different yeasts. They are left on the lees and stirred often. I feel this adds a nice complexity to the wines. The wines are then blended and cold/heat stabilized.
