12 Days Before Christmas – Day 1

It is December 24, 2009. It’s Christmas Eve and all is well. I drove from Manassas, Virginia to Fairmont, West Virginia to see my mom for CHristmas. The snow is still on the ground and boy is it cold up here. Mom’s decorations are beautiful…she has six Christmas trees all decorated…yes, that’s what I said…six!!!!

This is recipe from my mom…try it out sounds like fun…enjoy

Spinach Balls
Pre-heat oven 350 degrees
Ingredients needed:

2 10oz chopped frozen spinach (cooked and drained)
2 cups Pepperidge Farm Herb Stuffing (put in ziplock bag and smash with rolling pin)
1 cup chopped onion sauteed in 3/4cup butter
Dash of garlic salt and pepper
5 or 6 beaten eggs

Mix all ingredients – Form into small bite size balls (mom says about the size of a ping ball) and bake on cookie sheet at 350 degrees for about 15-20 minutes

Serve warm
